New-France winters are harsh and seem endless. But hopefully, in the end, spring always comes, and it heralds the rebirth of the good old festive spirit in the colony. Newcomers have learned very nice things from the Indians with whom they trade. Much of these things become part of the colony's folklore and traditions, and are passed on from generation to generation until now. Among the new discoveries, the secret of boiled maple sap transforms the world of sweet delicacies and cuisine as a whole. Every spring season (March and April), we welcome hungry visitors, along with other adepts of gluttony, and invite them to enjoy our authentic old-style meals. Beware: you'll be under the charm of our terrific historic characters & musicians. Of course, at the end of the meal, fresh warm maple toffee will be served outside as it was in good old times.
