Ox cheek that is grilled, then braised in a sauce made with cider, juniper berries, rosemary, and veal broth. Salmon filet cooked in a creamy sauce made with white  wine, aged cheddar from île-aux-Grues, sunflower seeds, and lavender. We can't retrace the origins of this recipe. The combination of salmon, blue lavander, sunflower seeds, and a strong cheddar sauce served with diced bacon on a crispy buckwheat pancake, could as well be an inspired creation of our very own Master Cook.
