Salmon with Wild Strawberries & Juniper Berries
A filet of salmon conserved in olive oil with a sauce made with preserved strawberries and juniper berries. On a particularly inspired day, our Master Cook conducted a plethora of experiences. Among other things, he discovered that salmon conserved in the pan with olive oil was quite savoury, especially if it had been precviously coated with Guerande salt and pepper. A real treat!
